Salt is one of the foodstuffs that we most frequently take into our bodies. Every day, throughout the whole of our lives, we consume salt. Often salt is openly attacked and is presented as a promoter of ill health. It is nonetheless the case that salt is present in our bodies in a natural form.

Salt is one of the most essential mineral compounds for health.

Salt is the most commonly consumed mineral compound in the human diet. In its dissolved form, it plays a crucial role for our cells, in keeping the body hydrated, in nerve function, in digesting food and in the building up of bone. The body of an adult contains approximately 150 to 300 grammes of salt, and between one and three grammes are needed daily to balance the amount lost through sweat and other bodily excretion.

Although salt is one of the most essential compounds in maintaining good health, in fact it's a substance that has to be taken in regularly, we normally don't put a lot of consideration into the quality of the salt we're buying. Salt is one of the least expensive products found at the market, and we tend to buy it with a simple thought in mind: "all salt is the same". That said, the consumption of only salt of the highest quality is certainly important in maintaining one's health. The question then is how to determine which salt is high quality salt.

Industrially produced salt or naturally harvested salt?

In the industrial production of salt, the brine is placed into a so-called reactor where it is cleaned of lime, sodium carbonate and waste gasses – this is true whether the salt was mined or collected from the sea. Next the salt is placed into a compressor or centrifuge in order to separate it from the brine. Finally the salt is "enriched" with iodine and then, following the addition of anti-caking agents, it is put into packages. It is almost more appropriate to describe this process as salt production rather than salt collection. The aim of the such industrial  methods is to produce the highest possible quantity of salt (in a "chemically pure" form) at the lowest possible cost.

The goal in the natural harvesting of salt is quite different: the focus is not on keeping costs low, instead providing people with quality salt in its purist and most natural form. As here chemical cleaning processes are avoided, it is important that the naturally collected salt is free of pollutants. For the most part this is only possible with sea salt; even though this is the case, it is common that seawater contains a lot of heavy metals. High quality sea salt can thus only be gathered in places where the water is not somehow contaminated. Using the power of sun and wind, the salt is dissolved out of the seawater in salt basins. From this salt crystals form that are still naturally a bit wet – this is then filtered to remove shell parts and then packaged. This type of salt is not further ground so the salt crystals remain fully intact. It goes without saying that natural salt of the highest quality contains neither iodine nor anti-caking agents.
